This month Spice Breeze takes us to Turkey
The reverse tells us a little bit of Turkey’s history. It was first Greek and then Roman.
Our first recipe for this month is Anticuchos a Peruvian dish. Initially made with llama meat this dish translates to cuts from the Andes mountain and has a long history. Once translated by the Spaniards the meat was changed as well as the spices. Now you can find this dish on skewers made of beef heart, chicken or steak and eaten on holidays or bbq’s!
Our spice mix for this recipe includes; roasted garlic, Peruvian aji amarillo pepper, salt, cumin, black pepper and annatto. I love that Spice Breeze gives subscribers so many variations on their recipes which makes this subscription easy to play with an alter!
Next up is Basturma, an Armenian dish that includes a pastrami style beef that is seasoned with fenugreek. Grill it or use a dip to distribute this adaptations bold flavor.
This dish requires only thirty minutes of hands on work and includes three spice packets. The first includes fenugreek, cumin, allspice, black pepper and smoked paprika. The second includes just aleppo pepper as a modern alternative to paprika and the final packet includes just dill.
This month Spice Breeze honed in on the flavors of sundried tomatoes. This kit includes a sundried tomato seasoning as well as multiple ways to use this very mutable dish.
Options that Spice Breeze offered were a cheese spread with figs, Italian sandwich, pizza sticks or tomenade.
We also received a single packet of Makrut Lime powder that is to be used as a table seasoning. They give you many variations to use this spice even including some sweet dishes!
Our final spice kit for this month is Lahmacun a Turkish Culinary Spice Kit. I chose this one because it sounded good, was the regional focus or the packet and I had most of the ingredients on hand!
Our spice packet for this kit includes; paprika, Turkish pepper which is a blend of mild Marash & Urfa crushed with oil and salt, anardana or pomegranate and oregano.
To complete my recipe I first pulsed the onion and the garlic in a food processor.
Then I cut up parsley and green pepper and add it – leaving large chunks remaining. Also, I realize this isn’t my hand, my husband wanted to be my sous chef for this dish and he did a great job!
I love the way these mixtures look as they come together. They are colorful and smell great.
In the end you get something that looks like this.
You’ll transfer this mixture to a bowl and stir together really well.
Then you’ll add both your spice packet and your tomato paste
As well as your ground meat and mix together. This smells amazing by the way.
You’ll allow your mixture to rest for fifteen minutes or until all the liquid is soaked up. In the meantime you’ll preheat your oven to 325 degrees. (That is of course if you are using your oven to make your dish, you can also use an unoiled pan) For space requirements we used both!
Now you’ll add a very thin layer of your meat mixture to your tortillas. It’s important to be mindful that these will need to be cooked open and will thus require a lot of space which is something you’ll have to think about ahead of time.
We laid our pre-prepared tortillas out on cutting boards while we cooked four at a time!
Here’s what they look like once you pull them from either the pan or the oven.
You can dress these with yogurt, tomato, lettuce of your choice as well as lemon juice! So I made a whole bar at our table for the kids to choose from.
And then once you’ve added all your desired ingredients you’ll just roll your tortilla up and eat it like so! These were so delicious and the kids asked if they could please have them again which is the ultimate test of how tasty something really is!
So in summary
Presentation: Everything arrived to us perfectly in our package from Spice Breeze for August.
Quality: I love that the spices that come in this package are organic and free of salt as well as MSG.
Curation: The variations in this package are always excellent and I love learning about the different regions as well as flavors!
