Our first glimpse inside the Spice Breeze package for April.
Everything that we received in our Spice Breeze Subscription Box. We always love the colorful layout of the spices.
So what is all this stuff?
Our first kit is Mie Goreng. This Indonesian recipe is common in not only Indonesia but also Malaysia and Singapore. It combines stir fried noodles, veggies and the option for meat and protein.
We received one spice packet for this recipe that included galangal, turmeric, black pepper, nutmeg, chili, amchoor and tamarind.
Next up we have Paella Valenciana. Many take authenticity of this dish very seriously, a traditional paella is made with chicken or rabbit but Spice Breeze also offers a variation that is made with seafood (our own personal favorite variety).
Our spice kit for this recipe includes 2 packets. The first includes paprika, rosemary, onions, turmeric, roasted chili, smoked paprika and bay leaves. The second packet contains just Spanish saffron which is the most expensive spice in the world!
Second to last we have Koshary. This recipe hails from Egypt and is their national dish! It was originally a way to use up any leftovers you had on hand. In today’s world it is a popular street food and also has dedicated restaurants. The recipe consists of layers – there is a layer of noodles, rice and lentils and next a layer of onions and garbanzo beans, finally you’ll add red and white sauce to taste. Just mix it up and eat!
For this kit we received 3 packets! The first includes cumin, nutmeg, black pepper, coriander, cloves, cinnamon, cardamom, paprika and chili. The second packet includes black pepper and cumin and our third packet includes cayenne pepper to spice things up!
Our final kit and the recipe we decided to make for the month is Gulai, another Indonesian dish. We chose this because we love many of the flavors that it incorporates – lemongrass, coconut milk and makrut lime. Beyond that it’s super simple to create!
Our spice packet for this recipe includes; lemongrass, galangal, turmeric, mint, makrut lime, chili, coriander, star anise, lemon crystal and lime peel.
To start we cut our protein (we chose chicken breast but you can also use thighs, lamb, beef, pork tenderloin, turkey, fish fillet, lentils, tofu or hard boiled eggs – there are seriously endless options which makes this so inclusive) into 1 inch pieces.
Next we add our shallot and garlic to a pot (with preheated oil) and cook for 1 minute.
Next we add tomato puree and gulai spices and cook for 5 minutes on low heat.
Then we add our chicken and 1 cup of hot water. Bring the mixture to a boil and cook on low heat for 5 minutes.
Add entire can of coconut milk, bring to boil and cook on low for 5-10 minutes. Until chicken is tender.
Shred chicken and then return to sauce.
Serve your gulai with steamed veggies, rice and cucumber slices !

Curation: We feel like this package had an overall Indonesian theme but the two other recipes kept our variety really fresh which we appreciate!

I am making the gulai as I write this. I find the mixture extremely bland. The optional fresh chilies are not mentioned in the ingredient list,(and might have made a difference) and the directions do not speak of the ginger that is in the list. I’m wondering how to perk this up and give it some flavour. Also, the picture on the recipe card in no way represents the actual dish. Very confusing. Most of my Spice Breeze stuff has turned out pretty good.
